Papa Rolfe's Famous Tuna Tower

Smoked Tuna Tower

Inspirations: I had a tuna tower in Dallas and thought, wow that would be cool to make. Its my daughter's favorite.

Serves: 2-4

Ingredients:

  • 2-4 cylinder rings – any cooking stores will carry theses. I initially made mine out of PVC pipe from Home Depot, but MK got freaked out so I had to buy some fancy ones.
  • 1 cup of rice
  • 1-2 packs of smoked tuna or salmon – they come in thinly sliced pieces
  • 1 block of cream cheese
  • 1 small container of crab salad or dip – in the seafood section of the store
  • 1 ripe avocado
  • 1 T of capers
  • 1 T of champagne vinaigrette
  • 1 T of chopped green onions
  • 1 T of toasted sesame seeds
  • Box of crackers or sliced cucumbers
  • Rolfe Rub

Sauce:

  • 2 T of soy sauce
  • 1 T of brown sugar
  • 1 tsp of wasabi paste
  • 1 tsp of finely diced ginger
  • 1 tsp of BBQ sauce
  • ½ cup of mayo
  • 1 T of sriracha

Prepare:

  • Boil rice and strain – in the strainer add Rolfe Rub and the sesame seeds and toss
  • Chop up tuna or salmon and add capers and vinaigrette and toss
  • Chop green onions and add to crab salad – toss
  • Slice avocado and cream cheese
  • Sauce:
  • In a small saucepan – add soy sauce and brown sugar, wasabi, ginger and bbq sauce and simmer for about 15 mins and let cool
  • Combine soy mixture with mayo and sriracha

Build:

  • Put cylinder on a plate and add thin layer of rice
  • Layer of tuna/salmon mixture
  • Layer of cream cheese
  • Layer of avocado
  • Layer of crab salad
  • Layer of rice
  • Repeat the layers ( I leave out the second layer of cream cheee)
  • Using a drinking glass or something that fits inside the cylinder, compact the layers and push out of the cylinder to create the tower
  • Add a sprinkle of roasted sesame seeds on top
  • Add sauce on top and serve with crackers or cucumbers and
  • enjoy
